Crunchy Miso Salad

Chopped cabbage and cabbage, shrimp-flavored peanuts, avocado, coriander and chili peppers and the perfect sweet miso dressing.

Cabbage, cabbage, shrimp, coriander, peanuts and a creamy, sweet miso dressing… I could eat it for lunch every day and be satisfied with my life. (And I might think that I’m happy with that at the moment).


Actually, we had planned to release this after in the SOS series, but I couldn’t wait to get my hands on it because I’m just passion with it. And here it appeared at the beginning! This salad is ideal for the days of early spring / summer, when it gets warm, the grass turns green again, and the body feels ready to eat salads.

Many of these salad ingredients are easy to buy, they are already cooked / ready for use (I buy them at Trader Joe’s):

chopped cabbage
kale with boiled shrimps
peanuts with onions and chili
And this miso filling can be prepared in about two minutes. It is creamy, sweet, malleable, tender and very appetizing. A little garlic, but not too much, and lime punch is the most delicious addition to a salad that you could wish for.

Ingredient

Miso-Refueling:

1/3 Cup Avocado Oil
1/3 Cup Lime Juice (4-6 Limes)
1/4 Cup White Miso
1/4 Cup of Sugar
2 chopped garlic cloves
1/2 Teaspoon of salt

Crispy Miso salad:
1 pound of boiled shrimp, cut into small pieces
5 cups grated Tuscan cabbage
5 cups of grated cabbage
1 Cup Chili-flavored Peanuts (or similar)
2 Avocado Stalks
1/2 Cup chopped green onions
1/2 Cup grated coriander


This cooking mode will not darken the grid

Instruction
Mix all the ingredients in a refill glass or crush them in a small food processor until smooth. When the sauce thickens, add a little water so that it drains smoothly from the tip of the spoon.
Mix all the ingredients for a salad with dressing! You can prepare it in a large portion (for 4 to 6 people) or cook and store it separately for a week, for individual lunches and dinners, which I usually do! Crispy, sweet, tender and fresh!
