Carrot Coffee Cake

Carrot Cake Coffee cake! A very light dough, sprinkled with chopped carrots, sprinkled with thick crumbly cinnamon and seasoned with melted sweet honey butter.

I know this can be confusing: a carrot cake that looks like a vegetable cake, but also a cake combined with a coffee cake, which is also cake, but one that can be eaten for breakfast, but which is still quite appropriate and obviously looks like a cake?

But there is no reason for confusion.

The ingredients you need to prepare this spring treat
This is different from the classic carrot cake recipe with the awesome filling of crumbs that is needed for this, but in front of us is a fairly standard baking line.

For the cake:

Let’s make a carrot cake with coffee cake
That’s how we do it (it’s VERY SIMPLE).

Chop the carrots in a food processor. I hate rubbing things, especially carrots. I’m not even sorry. Enter me in the registration. I said it. Then I won’t make you rub something! Just let the peeled carrots pass through the food processor, and if you don’t have a food processor, what will you do? You need this post.

Make your dough. Take a large bowl and mix a very simple dough with eggs, flour, sugar, cinnamon and (wait) butter. Cream butter. Vegetable oil is traditionally used in carrot cake. But the breaking news: BUTTER IS DELICIOUS. So today we used butter. Obvious.
Mix a layer of sprinkles. Put all the ingredients in a small bowl for sprinkling and stir until a pebbly texture is obtained.
Bake! Grease the pan with oil or put a little parchment paper in it. Now it is baked under an aggressively thick layer of sprinkles. You can check the baking point of the cake by sticking a toothpick in the middle. If the toothpick comes out clean, that’s all!

Ingredient

Carrot Cake Coffee cake:

2 large carrots
3/4 Cup Granulated sugar
1/2 Cup Melted butter
2 eggs
1 cup of flour
1 Teaspoon of baking soda
1 Teaspoon of cinnamon

4 Tablespoons of melted cream
1/2 Cup Flour Oils
1/2 Cup Brown sugar
1 Teaspoon of cinnamon
a pinch of salt
Cooking mode prevents the screen from darkening

Instruction
Preparation: Preheat the oven to 350 degrees Fahrenheit. Peel and grate the carrots on a grater (I use my food processor). You should get about 1 1/2 cups.
Cake dough: whisk together sugar, melted butter and eggs. Add the carrots. Add flour, baking powder and cinnamon. Stir until everything is mixed. The dough will be very thick.
Sprinkle: mix the ingredients for sprinkling until you get a pebble-like texture (sometimes I mix everything together with my hands).
Baking: Roll out the dough into a greased 9-inch round baking dish (see frequently asked questions). Sprinkle with sprinkles. Bake until the middle hardens, 30 minutes. Pour the butter with honey on top, if you have (have) more.
