At normal times, I usually serve it with rice, beans and homemade pineapple sauce, which is prepared quickly, you know? It has a Cuban-style highlight: a mojo-style sauce with rice and beans and a few tropical fruits, just in matter. Delicious. Deliciously delicious.
But the beauty of it is that if you do not have time or patience for additional meals or if you are very hungry, the chicken can stand on its own.
I rarely really like recipes with chicken in a simple way, but this chicken, cooked directly from the pan, just tastes delicious. Just grease the chicken with a small amount of sauce directly from the oven, put a few skewers on it and you’re done. That’s all I need! Dinner consisted of only one sandwich, which was on the stove.
Ingredient
Coriander-orange sauce:
1/4-1/2 Cup finely chopped coriander
2 cloves of garlic, grated
on a grater, juice from 2 oranges (about 4-5 tablespoons of juice) + a little zest
3 tablespoons of brown sugar
3 tablespoons avocado oil
2 tablespoons white vinegar
1 1/2 Teaspoons of salt
chicken:
1.25 Pounds Boneless and Skinless chicken thighs, cut into small pieces
on wooden or metal skewers (optional)
Optional / For serving:
an 8.8-ounce bag of ready-made yellow rice (or cook it yourself!)
a glass of chilled or regular black beans weighing 14 ounces
1-2 Cups diced pineapple, mango and/or avocado (optional)
The cooking mode prevents the colander from darkening
Instruction
If you use wooden skewers, start with soaking!
Cover the baking sheet with parchment paper or foil. Turn on the grill and make sure that one of the oven grates is on top, about 6 inches from the heating element.
Put the chicken in a large mixing bowl for mixing.
Mix the ingredients for the sauce in a small bowl.
Sprinkle the chicken with only half of the sauce and stir so that it is covered; leave the other half of the sauce for after. Cut pieces of chicken into skewers or just drain the excess sauce and add the chicken directly to the pan! If you want (I will do it!), Sprinkle the chicken with an extra pinch of salt.
Cook on the grill for 12 minutes or until the chicken is browned and acquires a golden hue.
If desired – mix some remaining salsa with diced pineapple / mango / avocado to get a little “salsa”.
Grease the chicken with the cooked sauce. Serve the chicken with rice, beans and fruit sauce! Fresh, juicy and very tasty, just great.
