Chicken fillet with ginger and peanuts
1 1/4 pounds chicken thighs, cut into small pieces, finely
1-inch piece of ginger, grated
Peel 3 green onions, cut into thin slices (white and green parts separately)

2 tablespoons brown sugar
1 1/2 teaspoons salt
1 tablespoon olive oil or avocado oil
2-3 minced garlic cloves
1/2 cup chopped roasted peanuts
1/2 cup chopped cilantro
1 cup spinach, bok choy, etc

2 cups white rice or jasmine rice

Marinating the chicken: Mix the chicken in a stainless steel bowl with ginger, green onion (white parts), lime zest, brown sugar, salt and vegetable oil. Let it marinate for 20 minutes to 2 hours.
Rice: Place the rice ingredients in a quick cooking pot. Cook at high pressure for 3 minutes, then release the pressure naturally for 10-15 minutes (after 3 minutes, the dish is not ready yet – you will need free time to finish cooking). Cooking the chicken: Heat a large frying pan (non-stick or cast iron coating is suitable) over medium or high heat. Place the marinated chicken in a frying pan and divide into 1-2 portions, depending on the size of the pan. Leave the chicken for a few minutes to caramelize well

Additional ingredients: If the chicken is whole, reduce the heat slightly and add peanuts and garlic to the pan. Fry for about 3-5 minutes so that the peanuts are cooked and give the garlic a pleasant taste.
Finally, add the coriander, green onion and spinach. Squeeze the lime juice into the pan and season with salt and pepper if necessary.
